For simple Christmas cookies, you can make a basic sugar cookie using the following ingredients: 2 3/4 cups all purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1 cup butter softened, 1 1/2 cups sugar, 1 egg white, and 1 teaspoon vanilla extract. Combine dry ingredients (except sugar) in a medium sized bowl and set aside. Next blend butter and sugar until smooth. Add egg white and vanilla and blend well. Slowly add your dry ingredients and work into a dough. You can then either place small balls of the dough on a cookie sheet and bake at 375 degrees Fahrenheit for 8 to 10 minutes, or you can roll your dough out to 1/4 inch thickness and cut out cookies with your favorite Christmas cookie cutters. After the cookies are fully baked, allow to cool and decorate using cookie icing or sprinkles or colored sugars to add a festive touch to your holiday cookies. Christmas wreath cookies not only make a wonderful addition to your dessert table at your holiday gathering, but also make great Christmas gifts. For this Christmas cookies recipe, you will need the following ingredients: 14 tablespoons butter or margarine (softened), 1 cup sugar, 1/2 teaspoon salt, 1 large egg, 1 teaspoon almond extract, 2 1/2 cups all purpose flour, 6 drops green food coloring, candied cherries (cut into the small crescents), decorative candies or sugars for decoration. To prepare this Christmas cookies recipe, first blend the butter, sugar and salt with a mixer until fluffy, then add egg and almond extract and blend. Gradually add flour until completely blended. Divide dough in two and roll half in wax paper and chill for approximately one hour. Add food coloring to the remaining half and work into dough until the color is uniform, and then wrap dough in wax paper and chill for one hour. Removed chilled dough and roll out on lightly floured surface. Cut into strips and then take one plain strip and one colored strip and braid together. Take the braid and form a wreath shape - pinch the ends together at the top of the wreath to hold them together. Decorate the cookie with the candied cherries, candies or sugars and bake at 350 degrees Fahrenheit for 8 to 12 minutes or until cookies are starting to brown on the bottom. Let cool for 2 minutes before removing from cookie sheet. Thumb print cookies are also a great holiday baking favorite. When forming your cookies on the baking sheet, simply drop a teaspoon of dough on the baking sheet.
