Whatever reason you choose to be with family and friends to celebrate your beliefs, a meal of some type is usually prepared - perhaps spiced ham or a pork roast with a sweet chutney, several vegetables sides, deviled eggs, a fresh spring salad and, just when you think you can't eat another bite, an Easter dessert characteristic of the season. According to Food Network, some type of cake is sure to be served, with carrot ranking high on the favorites list. So much so there are carrot cake contests with favorite icings - cream cheese, and decorating techniques that have been passed down through the family, mother to daughter, mother to daughter. Actually, there are many carrot favorites, including cupcakes, cookies, or round layer cakes with nuts on the sides and carrots made of colored icing dotting the top. Coconut is another spring dessert ingredient and, when tinted green and used along with the traditional jelly bean, can create the Easter egg hunt that many children look forward to when they are young. Chocolate is always an Easter dessert favorite. Chocolate cake, chocolate cookies and chocolate cream pie with whipped cream peeking around the edges and colorful sprinkles splashed here and there. Pastel colors for icing flowers add beauty as well as flavor to plain sugar cookies or a quick last minute plate of cupcakes or brownies. That goes for brownie type cupcakes drizzled with icing and sprinkled with Easter toppings. For children everywhere, Easter and Easter desserts would be nothing without the Easter bunny. Imagine their delight when he turns up for dessert in the form of a cake shaped like a bunny with coconut for fur and halved marshmallows for cheeks. Cupcakes can be decorated to look like the little furry animals - licorice whiskers and all. And don't forget the lamb shaped cakes - symbolizing spring, the risen Christ or fertility, or the cookies in the shape of tulips - brightly iced in pink or yellow, or baby chicks - again symbolizing spring and new birth. These types of cakes are traditionally made with a pound cake recipe, as they are a bit heavier and hold the different shapes better. Coconut is used with white icing for fur or feathers, and pastel tinted icings add color for facial features and the inside of the ears. A traditional sugar or cut out recipe can be used for the cookies. Last but not least, don't forget the sorbet dipped into a lovely dish with a few sprigs of mint.
