Useful ResourcesDevilled Egg Eyeballs look almost like the real thing and are great fun to serve at Halloween to adults and children alike! Simply make your own devilled egg recipe and add a slice of pimento-stuffed green olive to the center. Then, using red food coloring, make fake veins in the yolk mixture to resemble bloodshot eyes. You will definitely be creating your own Halloween tradition. In keeping with the eyeball theme, you can make healthy Halloween party appetizers by simply slicing carrots into 1/2 pieces, placing a dap of cream cheese on top, and decorating with half of a black olive in the center. These look like orange eyeballs, and the kids might even eat them! While still on the healthy Halloween party appetizer bandwagon (to try to compensate for all that Halloween candy!), why not make a bean dip? Use a can of drained black beans, 1/2 cup of diced jicama, 1/3 cup of your favorite vinaigrette dressing and some chopped chili pepper - choose a spicy one for adults or a mild one for the whole gang - and mix it all together. Chill until ready for use and serve with some healthy chips along with homemade or bought guacamole dip - renamed Monster Mash for the occasion! You can make your favorite cold or warm dip and serve it in a hollowed-out pumpkin to turn it into a Halloween appetizer. Here is one I make often, which serves about 8 hungry people, and the recipe is easily doubled for a crowd:

Other Halloween Appetizers Need more ideas for Halloween party appetizers? There are many recipes for cheese balls; you can experiment with a new recipe or an old favorite and simply decorate it in the shape of a Jack-O'-Lantern by forming the mixture into a round pumpkin shape and placing it onto a serving plate decorated with shredded lettuce or chopped parsley. Using the handle of a spoon, make vertical lines down the sides to resemble a pumpkin. Insert a piece of carrot into the top for a stem. Take slices of pumpernickel or dark rye bread, cut out triangle shapes for the eyes, nose and mouth of your Jack-O'-Lantern, and press them into place on the cheese ball. Serve with a variety of crackers and provide a small knife to make it easier to spread. The younger Halloween guests will also enjoy "pigs in blankets" made with cocktail franks wrapped in crescent rolls and baked, or let them make their own Halloween party appetizers (if you're brave enough!) with crackers, slices of salami, vegetable crudites and cans of spray cheese - although this is probably only a good idea if you have a dog who will clean up the mess!
