When deciding the drinks that will be served, keep several things in mind. Remember that not everyone likes to drink alcohol, so make sure you have a good blend of both hard and soft drinks. Also, if you are serving alcohol, make sure that all your guests will make it home safely (if they are not in a condition to drive and there is no one to transport, make sure you have plenty of room for them to bed down for the night). Champagne is one of the most widely served drinks at a New Year's Eve celebration. Cranberry-Champagne Sparkler Punch is sure to be a crowd pleaser at your celebration. For this New Year's Eve recipe, you will need the following: 3 cups of fresh cranberries, 1 lemon, 1/2 cup sugar, 3/4 cup water, 4 cinnamon sticks (broken into pieces), 5 cloves (whole), 1 tablespoon fresh sage (snipped), 1/2 cup sourwood honey, 1/4 cup freshly squeezed lemon juice, 2 cups ice cubes, and 1 bottle of chilled champagne (you can get non-alcoholic champagne for this recipe if you want to make a soft punch). To prepare this New Year's Eve recipe, first set aside 1/3 cup of your cranberries. Using a lemon grater, remove strips of the peeling and place in a medium sauce pan along with the sugar, water, cinnamon, cloves and sage. Boil until the sugar is dissolved and then add the remaining cranberries and return mixture to a boiling state. Reduce heat and let simmer for 5 minutes. Remove from heat and let mixture cool for about one hour or until room temperature, then stir in honey and lemon juice. Strain mixture and discard all solids, then cover and chill juice for at least one hour. Pour mixture into a small punch bowl, add ice and then slowly add champagne and stir gently. To serve, simply ladle into wine glasses and garnish with cranberries or sage sprigs. For a more elegant gathering, you may want to consider serving shrimp cocktails to your guests. How do you prepare this New Year's Eve recipe? To make individuals cocktails, take 8 ounce plastic cups and place cocktail sauce at the bottom of the cups. To make your sauce, you will need: 16 ounces chili sauce, 6 tablespoons horseradish, 1/4 cup white sugar, 1 juiced lemon, and 3 drops hot sauce (you can add more for a hotter sauce or leave the hot sauce out for a milder cocktail sauce). For this New Year's Eve recipe, simply mix all the ingredients together in a small bowl and chill. After putting sauce at the bottom of each small cup, make a circle of shrimp around the rim of the cup.
