On day four, remove mixture from refrigerator and knead mixture well. Divide the mixture into five equal parts and work each part into a roll. Make sure that you get as much air kneaded out of the mixture as possible. Also, you want to make sure that your rolls will hold their shape. Place rolls on a broiler pan and bake for 8 hours at 350 degrees Fahrenheit. Each finished roll will be approximately 8 to 9 inches long. This summer sausage will be a great addition to your holiday gathers.
For a spicier sausage, you can prepare the following summer sausage recipe. You will need the following ingredients:
Mix all ingredients in a large mixing bowl, cover with cling wrap and refrigerate for three days - taking mixture out one time per day to knead and blend ingredients. On the fourth day, remove mixture and knead out excess air. Divide into five separate sections and shape each section into an 8 inch roll. Place on a wire rack over a drip pan and bake for 8 hours at 200 degrees Fahrenheit. Let logs cool and wrap in cling wrap and place in the refrigerator. Logs should be chilled completely before serving, and these will also freeze well.
When creating your summer sausage, you can take a basic recipe and add the spices you wish to include. Be creative when preparing your recipes. Spices that you can add to make a great addition to your summer sausage recipes include hot peppers, paprika, oregano, and thyme. Also, if you want a healthier summer sausage recipe, you can substitute ground turkey in place of beef. Other recipes call for ground venison in place of beef for your summer sausage.
