BEST THANKSGIVING CASSEROLE Ingredients: Directions: Use cooking spray such as PAM to spray a 9-inch square casserole dish. Preheat your oven to 350 degrees F. Cook the rice as directed until tender. In a medium sized skillet, add the olive oil, celery, and onion and saute until tender. This usually is less than 5 minutes. Combine all of the ingredients in a bowl and then spread into the casserole dish. Bake for 45 minutes and serve warm. If you like cheese, sprinkle vegan cheese on the top and allow to melt.
VEGAN TURKEY DINNER Try this tofu-style turkey this Thanksgiving as an alternative to meat. You can stuff this turkey with your favorite stuffing as well. Ingredients for this vegan Thanksgiving recipe: Turkey Roast: Marinade: Instructions for this vegan Thanksgiving recipe: For the turkey roast, put the tofu in a blender and blend until all of the lumps are gone. If you do not have a blender, you can mash it by hand. Place in a large bowl and add the herbs, vegetable stock, and season with salt and pepper to taste. Use a colander with a clean dishtowel on the bottom of it. Add the tofu mixture in the colander and wrap with the dishtowel. Put the colander on a plate and lay a heavy weight on the top. Water will be squeezed out. Place in the refrigerator for about 3 hours or overnight if possible. Remove from the refrigerator and scoop out the center of the roast. You can prepare your own stuffing and place the stuffing in the empty cavity. The tofu mixture that you scooped out, place over the stuffing and press firmly. Use an oiled cookie sheet and flip the turkey roast over onto the sheet. To make the roast look more like a turkey, use the remainder of the tofu to form legs and wings. To make the marinade, whisk the marinade ingredients and brush on the turkey roast. Preheat the oven to 350 degrees F and cook the turkey roast for 1 1/2 hours, adding more marinade every 15 minutes. Serve hot.
